Description
If your homemade roti comes out stiff, dry, thick, or refuses to puff, the problem is usually not that roti is difficult.
It is usually one of a few small things: the dough is too dry, it did not rest long enough, the roti was rolled unevenly, or the pan was not hot enough.
Today I’m showing you how I make soft Indian roti at home, even if you are cooking in a Western kitchen and do not have traditional Indian equipment.
⭐ EASY ROTI / CHAPATI
INGREDIENTS
whole wheat atta
warm water
pinch of salt, optional
a little oil or ghee, optional
If you cannot easily find Indian atta, I’ll also show you what to look for in a regular Western grocery store.
THE IMPORTANT STEPS
1. Keep the dough soft
A stiff dough usually gives you a stiff roti. Add your water gradually and aim for a soft, comfortable dough.
2. Let it rest
Cover the dough and give it time to relax before rolling. A rested dough is much easier to work with.
3. Roll evenly
Perfect circles are not important. Even thickness is.
If one side is very thin and another side is thick, the roti will cook unevenly and may struggle to puff.
4. Use a properly hot pan
The pan should be hot before the roti goes on. If the heat is too low, the roti sits there too long and dries out.
5. Do not overcook it
Roti cooks quickly. Leaving it on the pan too long is one of the easiest ways to make it hard.
6. No gas flame? No problem
If you have an electric or induction stove, you can still make beautifully puffed roti using the pan.
You do not need a traditional gas flame to make good chapati at home.
7. Keep finished rotis covered
As each roti comes off the pan, keep it covered with a clean kitchen towel or inside a covered container.
That trapped warmth helps keep them soft while you finish the rest.
NO ROLLING PIN?
A simple smooth bottle can work in a pinch.
And if rolling is the part you struggle with most, I’ll also show you a simple tortilla-press trick for getting the dough started before finishing it by hand.
TROUBLESHOOTING
Roti is stiff?
The dough may be too dry, or the roti cooked too long.
Dough keeps springing back?
Let it rest a little longer.
Roti will not puff?
Check your pan temperature and make sure the roti is rolled fairly evenly.
Roti is raw inside?
It may be too thick or the heat may be too high.
Roti is becoming dry while you cook the rest?
Keep the finished rotis covered immediately.
Roti does not need to be perfectly round to be good.
It just needs to be soft, properly cooked, and something you actually enjoy eating.
Serve it with dal, rajma, chana masala, paneer, vegetables, chicken curry, or any Indian curry you like.
If you try this method, tell me in the comments whether you got your first roti to puff.
