Description
If your scrambled eggs usually mean eggs, salt, and maybe a little butter, this is a very different way to make them.
In this video, I’m making Anda Bhurji — Indian-style masala scrambled eggs with onion, tomato, green chili, ginger, warm spices, and fresh coriander. It is soft, savory, slightly spicy, and full of flavor, but still simple enough for breakfast, brunch, lunch, or a quick dinner.
The key is to build the masala first, then add the eggs and cook them gently so they stay soft and tender instead of becoming dry.
Ingredients
- 4 eggs
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1 green chili, finely chopped — use less or leave it out if you prefer mild food
- 1 teaspoon grated ginger or ginger paste
- ¼ teaspoon turmeric
- ½ teaspoon chili powder, or to taste
- ½ teaspoon cumin powder or a little cumin seed
- ¼–½ teaspoon garam masala
- Salt, to taste
- Fresh coriander / cilantro, finely chopped
- 1 tablespoon butter, ghee, or oil
How to make it
Heat the butter, ghee, or oil in a skillet over medium heat.
Add the finely chopped onion and cook until it softens and begins to turn lightly golden.
Add the green chili and ginger, then cook briefly until fragrant.
Add the chopped tomato along with the turmeric, chili powder, cumin, garam masala, and a little salt. Cook until the tomato softens and the mixture becomes slightly jammy rather than watery.
Crack the eggs into a bowl and whisk them lightly.
Lower the heat slightly, pour the eggs into the masala, and begin folding everything together gently.
Cook slowly, stirring and folding rather than aggressively scrambling, until the eggs are just set but still soft and moist.
Turn off the heat before they look completely dry because they will continue cooking from the residual heat in the pan.
Finish with plenty of fresh coriander.
Serve hot with toast, roti, flatbread, pav, or even on its own.
If your chili powder is very strong, especially in the US, Canada, UK, or Europe, use less. You can also use sweet paprika for color and a little cayenne for heat.
This is one of those recipes that takes very ordinary eggs and gives them a completely different personality.
Let me know in the comments how you usually make scrambled eggs where you live. ❤️
