Description
You ever seen somebody put raw chicken inside a brown paper bag and start shaking it?
If you grew up around old-school Southern kitchens, you might remember seeing that paper bag come out when it was time to fry chicken. Seasoned flour went in, a few pieces of chicken went in, the top got folded over — and then came the shake.
But that bag wasn’t just some strange thing the old folks did.
In this video, I’m showing you why Southern cooks used brown paper bags to coat fried chicken, how the method worked, why they only added a few pieces at a time, what to do with the excess flour, and one important step after dredging that can help your coating stay where it belongs.
Sometimes the simplest things in an old kitchen had a job. That paper bag wasn’t trash sitting beside the stove.
It was kitchen equipment.
And even though our kitchens have changed, there are still lessons in the way the old folks did things that are worth remembering.
Did your family shake fried chicken in a brown paper bag? Did they use a bowl, plastic bag, or something completely different? Tell me where you’re from and how your family did it.
