If your crawfish keep coming out bland, your seasoning might not be the problem — you may be leaving them on the fire too long.
In this video, I’m showing you an old Louisiana crawfish-boil method that separates cooking from seasoning. Instead of continuing to boil crawfish hoping they'll pick up more flavor, we’ll talk about why experienced cooks shut the fire off, let the crawfish soak, and sometimes even add ice to cool the pot down.
I’ll also show you why I build my seasoned water before the crawfish ever go in, why potatoes, corn, shrimp, and crawfish shouldn’t all follow the same clock, how to taste your way through the soak, and what to do differently when you’re boiling a second sack.
The fire has one job. The seasoned water has another.
The boil cooks them. The soak seasons them.
Now I want Louisiana to settle something for me: Do you add ice to your crawfish boil or absolutely not? And tell me where your family is from.
