You ever seen somebody put a whole boiled egg in a pot of gumbo?
If you didn’t grow up around certain Louisiana kitchens, it might look like somebody made a mistake. But some old-school families had a very practical reason for doing it. When more people showed up than expected, adding eggs was one way to make the gumbo they already had go a little further and make sure everybody had something substantial in their bowl.
In this video, I’m showing you why some Louisiana cooks added whole boiled eggs to gumbo, how they were added, and another old-school variation you might not expect at all — some families cracked raw eggs directly into the simmering pot and let them set right in the gumbo. Pasted markdown
And this wasn’t just one family doing something unusual. Eggs also show up in Louisiana gumbo traditions connected to Lent, including versions where eggs became a major part of the meal.
That’s what I love about old-school cooking. Sometimes something that looks strange makes perfect sense once you understand the problem the old folks were solving.
Did your family put boiled eggs in gumbo, crack them in raw, or would an egg NEVER come near your gumbo pot? Tell me where your people are from and how your family made it.
