This is a quiet birthday in our home in Japan.
As I make a homemade birthday cake and spend an ordinary day with my family, I find myself looking back on a journey that changed my life.
After we got married, we dreamed of having a child.
We experienced the pain of pregnancy loss, and five years after our wedding, we were finally blessed with our son.
This video is about more than a birthday.
It is about the small changes I made in my daily life in Japan, the people who supported me, and the lessons I learned about trust, acceptance, and gratitude.
I hope this Japan vlog offers a peaceful glimpse into Japanese family life, Japanese home cooking, and the quiet beauty of life in Japan.
Thank you for spending this special day with us. 🌿
🍰 RecipeDairy-Free & Gluten-Free Cheesecake(15 cm / 6-inch cake ring)
Ingredients
Filling
A
・150 g soy yogurt
・12 g lemon juice
・30 g honey
・30 g white miso
・50 g coconut oil
B
・200 g soy milk
・15 g potato starch
・35 g beet sugar (or your preferred sugar)
・2 tsp agar powder
Crust
・150 g gluten-free rice flour cookies
・35 g coconut oil
Topping
・Seasonal fresh fruit
Instructions
1. Make the crust.Place the cookies in a zip-top bag and crush them into fine crumbs with a rolling pin. Transfer the crumbs to a bowl, add the coconut oil, and mix well.
2. Line a flat tray or plate with parchment paper and place a 15 cm (6-inch) cake ring on top. Firmly press the cookie mixture into the bottom to form an even crust. Chill in the refrigerator until firm.
3. Prepare the filling. In a small saucepan, combine all the ingredients in A and whisk until smooth. Heat gently over low heat until it just begins to simmer, then remove from the heat. Add the coconut oil and whisk well until fully emulsified.
4. In another saucepan, combine all the ingredients in B and stir well with a spatula. Place over medium heat. Once it comes to a boil, reduce the heat to low and cook for about 3 minutes, stirring constantly to prevent burning.
5. While mixture B is still hot, gradually whisk in mixture A until smooth and fully combined.
6. Pour the filling over the chilled crust. Let it cool to room temperature, then refrigerate until completely set.
7. Top with your favorite seasonal fruit before serving. Enjoy!
Thank you so much for watching.
