Description

Queen Elizabeth's Pancakes — thick, fluffy drop scones made with one surprising pantry ingredient: cream of tartar. Back in 1960, Queen Elizabeth II mailed her own pancake recipe to President Eisenhower after he enjoyed them at Balmoral — and today we're making it right here at my table. I'd never put cream of tartar in pancakes before, and y'all, these came off the griddle tall, golden, and unlike any pancake I've had. I added a little splash of vanilla and almond, and I'll tell you the one small change I'd make to perfect it. 📖 Get the printable recipe: https://marykatherinestable.com/queen-elizabeth-pancakes/ INGREDIENTS: • 3 cups all-purpose flour (spooned in and leveled) • 4 tablespoons granulated sugar • 2 teaspoons baking soda • 3 teaspoons cream of tartar • 2 large eggs • 1½ cups milk • 2 tablespoons butter, melted • ½ teaspoon vanilla extract • ¼ teaspoon almond extract • Pinch of salt (optional — my one recommended change) • Butter and maple syrup, for serving QUICK TIPS: • Spoon your flour into the cup and level it off so the pancakes don't get heavy. • Whisk the wet ingredients 30–40 seconds, until frothy on top. • Leave the batter a little lumpy and let it rest about 5 minutes — it gets thick and bubbly. • Griddle at 350°F, about ½ cup per pancake. These won't look as dry on top as regular pancakes before they're ready to flip, so peek underneath.
