Description
I quit adding rice to my Stuffed Peppers! This creamy Italian filling wins every time.
Forget classic rice filling. We are stuffing these peppers with orzo pasta, juicy ground turkey, and a silky tomato-cream sauce loaded with garlic, leek, and fresh herbs - all topped with golden, bubbly Mozzarella. Somewhere between a stuffed pepper, a pasta bake, and an Italian casserole. Served with a crunchy salad and a bright lemon-Dijon dressing to balance the richness.
Customize it! Any ground meat works (beef, pork, chicken, sausage). No orzo? Use ditalini, small shells, or broken spaghetti. No Mozzarella? Cheddar, Monterey Jack, or any good melting cheese works great.

📝 Quick Instructions:
Peppers: Cut off tops, remove core and seeds. Level bottoms (don't cut through). Save tops. Place cut-side down in a dish with a splash of water. Pre-bake 15-25 min at 375°F / 190°C.
Orzo: Boil in salted water just shy of al dente. Drain, drizzle with olive oil.
Meat: Sear ground turkey on high heat, flat for a crust. Flip, break up, cook 2-3 min. Season with salt, pepper, oregano.
Sauce: Same skillet. Sauté diced pepper tops until soft. Add leek, 2-3 min. Make space, add butter, garlic, chili flakes, tomato paste. Cook until fragrant. Add tomatoes with juice. Season with salt and sugar. Pour in cream, simmer 2 min.
Combine: Off heat, return meat and orzo. Add parsley and basil. Stir in a handful of Mozzarella.
Stuff: Drain peppers, flip up. Fill and pack tight. Top with remaining Mozzarella.
Bake: 15-20 min at 400°F / 200°C until golden and bubbly.
Salad: Quick-pickle onion with vinegar, salt, sugar - 5-10 min. Toss with cucumbers, tomatoes, lettuce, lemon zest. Shake dressing in a jar, drizzle, toss.
Serve: Rest peppers 10 min for the filling to set, then plate with salad. Enjoy!
