Go and look at the chicken in your refrigerator.
The front very likely says one hundred percent natural. Now turn it over and read the small print, and there is a fair chance you will find a word there. Solution. Or enhanced with. And a number beside it. If that number says fifteen percent, then fifteen percent of what you paid chicken prices for is salt water. And they may print natural on the front, because salt is natural and water is natural, and the word is not required to mean anything more.
I do not come at this as a man with a long receipt and a grievance. I come at it from the other end. We sell honey, and there is maple done a few miles from here by people I have known my whole life. The man who makes a thing is the first one robbed when somebody sells a cheaper thing under his name, because he cannot drop his price to meet it. He does not lose the sale to a better man. He loses it to a bottle with a picture of a cabin on it.
My grandfather taught me that with two jars. A fellow at market was selling honey well under ours and I was young enough to be indignant about it. He bought a jar of the man's honey and set it on the pantry shelf beside one of ours. By February ours had gone grainy and stiff and pale and I would have told you it had spoiled. The other sat there clear as a window. He took them both down and said, ours is honey. That one never was.
You cannot be fooled about a thing you have made yourself. Everything else, you have to read.
The twelve:
The lemon in the plastic bottle, and why the arithmetic does not even work Vanilla, including the fair part, and the one word on a carton doing all the work Olive oil, the three things that help, and what real oil does at the back of your throat Grated cheese, the wood fibre filler, and what it costs once you take the filler out Wild rice, the one that is not lying exactly, and the difference between a lake and a field Shrimp and scallops, the soak, and the one word to say out loud at the counter White fish fillets, what the testing found, and the fish sold as white tuna that some countries will not permit Salmon, and the tell a farmer can give you about February Pancake syrup, what is actually in it, and the forty years and forty gallons behind the real thing The plumped chicken, the sodium nobody mentioned, and exactly where to look on the back Honey, the most counterfeited food in the world, and the test you can run in your own pantry for nothing
On the fish ones I say plainly that I am no fisherman, that this is not my water and not my trade, and that what follows is what the testing found rather than what I know with my hands.
The plain limits. Reading a label will not make you an expert, and some of these cannot be caught by any ordinary person at a shelf. Olive oil and honey are the worst for it, and anybody offering a simple home test for either is selling something themselves. And the fix for most of this costs more. I am not going to pretend a household counting every dollar can switch the lot, and the worst thing I could do is make somebody feel foolish for buying what they can afford. If you buy the cheap one knowing exactly what it is, you have done the whole of what this asks.
Look at what the twelve have in common. Water at chicken prices. Water at scallop prices. Syrup at honey prices. Fish paste at crab prices. Tilapia at snapper prices. Wood fibre at cheese prices. Every one lives in the gap between what a thing costs to make and what a label is allowed to charge for it, and the only thing standing in that gap is whether you happen to know. Nobody earns an extra penny when you turn the package over, which is precisely why the small print is small.
Tell me in the comments which of the twelve got you. And if you are new here, tell me whether you have a farm stand or a market within driving distance, because for half this list that one fact is the whole answer.
Next time, eggs, because there are five or six words printed on a carton that sound as though they mean something and mostly do not, and I keep hens, so that one I can tell you from the inside.
I gathered the whole of it into a book at eliasyoder dot com.
The people who built this country with their hands knew that, and we are only just starting to remember it.
