Description

So cheesy and melty, this easy dinner disappears in minutes! Savory seasoned beef, peppers, corn and a melted Cheddar-Mozzarella center, folded into golden cheesy triangles. A fast, easy dinner that looks impressive but takes about 20 minutes of hands-on work. Total time: About 30-35 min. Roughly 15-20 min prep, 15-20 min baking. Servings: Makes 6-8 pockets, enough for 3-4 people. Customize it! Use ground beef, pork, turkey or chicken. Any good melting cheese works - Cheddar, Mozzarella, Gouda, Monterey Jack or Pepper Jack if you like heat. Want more kick? Add extra chili flakes or a diced jalapeno. Don't have corn? Skip it or toss in black beans instead. The filling is flexible - tell me your favorite combo in the comments! 🔔 New recipes every week: https://youtube.com/@YumCult 👍 Like if you enjoyed! Where are you watching from? 🌎👇 🛒 Ingredients: For the Beef Filling: ~1 lb / 500 g ground beef 1 onion, diced 1 bell pepper, diced 2-3 garlic cloves, minced 1-2 tbsp tomato paste 1/2 tsp ground cumin 1 tsp smoked paprika 1/2 tsp chili flakes 2 tbsp Worcestershire sauce 1 tsp Dijon mustard ~1/2 cup / 100 ml beef stock or water A handful of frozen corn Fresh parsley, chopped Butter for cooking Salt and pepper to taste For the Pockets: 3-4 flour tortillas, 10-inch / 25 cm ~3.5 oz / 100 g shredded Cheddar ~8 oz / 250 g shredded Mozzarella 📝 Quick Instructions: Beef: Sear the ground beef in a hot pan with a little oil. Let it sit for a minute to build a nice crust before breaking it up. Season with salt, pepper and cumin. Transfer to a bowl. If using fattier beef (80/20), drain the excess grease first. Vegetables: In the same pan, melt a knob of butter. Cook the onion and pepper until softened. Add garlic, tomato paste, smoked paprika and chili flakes. Cook 30-40 seconds until fragrant. Sauce: Return the beef. Add stock, Worcestershire sauce and Dijon mustard. Cook until thick - the filling should not be wet or it will make the tortillas soggy. Stir in the corn and parsley off the heat. Assemble: Cut each tortilla in half. Add a little cheese, about 2 tbsp of filling, then a bit more cheese. Fold into a triangle and press gently. Bake: Grease a baking dish. Arrange the pockets, top with the remaining cheese. Bake at 400°F / 200°C for 15-20 minutes until golden and bubbly. For extra color, broil the last 2 minutes - watch it closely. Rest and serve: Let them cool a few minutes so the cheese sets. Serve as is or with sour cream, salsa or guacamole on the side.
