Nothing beats rich, velvety, old-fashioned homemade fudge! If you love that ultra-creamy, melt-in-your-mouth texture just like traditional Mackinac fudge, this recipe is an absolute must-try. Recipe: Old-Fashioned Chocolate Fudge Ingredients: 4 cups granulated sugar 1 1/3 cups milk 1/4 cup light corn syrup 1/4 teaspoon salt 4 oz unsweetened baking chocolate (or 2/3 cup unsweetened baking cocoa) 1/4 cup butter or margarine 2 teaspoons vanilla extract 1 cup coarsely chopped nuts (optional) Instructions: Grease the bottom and sides of an 8-inch square pan with butter. In a 3-quart saucepan, combine the sugar, milk, corn syrup, salt, and chocolate. Cook over medium heat, stirring constantly, until the chocolate is completely melted and the sugar is dissolved. Cook, stirring occasionally, to 234°F on a candy thermometer (or until a small amount dropped into a cup of very cold water forms a soft ball that flattens when removed from the water). Remove from heat. Stir in the butter. Do not agitate or stir it further at this stage. Cool the mixture without stirring until it reaches 120°F (about 1 hour). Add the vanilla extract and, if desired, nuts. Beat vigorously and continuously for 5 to 10 minutes using a wooden spoon, until the mixture thickens and loses its glossy shine. (It should hold its shape when dropped from a spoon). Quickly spread the fudge into the prepared pan. Let it cool completely until set, then cut into squares.
