Description
The power goes out, and a refrigerator full of food suddenly becomes a set of decisions most people make by sniffing.
The rule that decides every one of them: bacteria multiply fastest between about 40°F and 140°F. Perishable food that's been above 40°F for more than two hours should be thrown away, even if it looks and smells fine.
In this video: leftovers, and why reheating doesn't always make them safe. Cooked rice, whose toxin survives heating. Deli meats, milk, soft cheese, eggs, cut fruit, and thawed food from the freezer. Plus the foods people throw away that are usually fine, including hard cheese and most condiments.
And what decides how much you lose: keep the doors shut, since a full freezer holds for about 48 hours and a fridge for about 4. Put a cheap thermometer in each. Move medication to a cool box first. Prepare infant formula with safe water. And cook outdoors only, never indoors.
When in doubt, throw it out.
