Description

Lobster was once so embarrassing to eat that pre-Revolution Mainers buried the shells rather than let them pile up outside the house. It was cheap, abundant, and even fed to prisoners. The forgotten rise of the lobster roll starts here. Today the lobster roll is one of America's priciest sandwiches. So what happened? In this episode, I'm tracing the 400-year journey from "barely a penny and a half a pound" to a multi-billion-dollar industry. From Edward Winslow's account of lobsters in 1621 to a record 78-million-pound modern catch, this is the forgotten history of the lobster roll. Lobster Roll Recipe 4 Lobster Tails - This will yield lobster for 3 full rolls and 4 if stretched a bit. Fill a 12 cup Dutch Oven half way with water and bring to full boil. Add two tablespoons of salt to the water. Place Lobster tails in for 5 minutes, turn down the heat to medium after two minutes. Remove, cool, peel, and chop lobster into 3/4 inch pieces. Toast the rolls in butter on their sides if possible. The genuine lobster roll bread will allow for this. Otherwise, just toast as best you can. Finely chop 1 small shallot and add to 6 tablespoons of butter in skillet. Add chopped lobster and heat for about 1 or 2 minutes, but no longer. Add lobster to the roll and enjoy. #ForgottenRecipes #FoodHistory #Nostalgia #LobsterRoll #Maine #Connecticut #VintageRecipes #AmericanFoodHistory
