Why would anybody put plain yellow mustard on catfish before frying it?
It sounds strange until you understand what that mustard is actually doing.
In this video, I’m showing you an old Southern fried catfish technique that uses ordinary yellow mustard before the fish ever touches the cornmeal. I’ll show you how the mustard can help the coating grab onto the fish, what it adds to the flavor, and answer the question most people are probably thinking — does the catfish actually taste like mustard?
We’ll also look at why you don’t need to drown the fish in mustard, why the cornmeal and frying technique still matter, and what happens when we put the mustard-coated catfish up against a more traditional preparation without it.
Now, I’m not telling you every Southern cook fried catfish this way. They didn’t. Every family had their own method — mustard, hot sauce, buttermilk, straight into the breading, or something else entirely.
But that’s what I love about old-school Southern cooking. Sometimes you’d watch the old folks reach for an ingredient that didn’t seem like it belonged anywhere near the food. If nobody explained it, all you remembered was that they always did it.
There was usually a reason behind the step.
Now I’m passing it on to you.
How did your family fry catfish — mustard, hot sauce, buttermilk, or straight into the cornmeal? And who taught you? Tell me in the comments.
