Pasta Fazool 4-15oz cans of Canellini Beans 1-8oz can Tomato Sauce 5 carrots - peeled and chopped 5 stalks of celery - chopped ½ medium onion - chopped 5 cloves of garlic - whole 2 Ham Hocks 4 quarts (16 cups) water ¼ cup olive oil 1 ½ cups ditalini pasta (or similar small pasta cooked and rinsed) salt/pepper to taste In a medium stockpot, add water, celery, carrots, and a can of tomato sauce. Bring to a boil, then reduce to a simmer for about 45-minutes or until the mixture reduces by ⅓ its original volume and vegetables are tender. In a large stockpot, add olive oil and onions. Cook until onions become translucent and then add whole garlic cloves. Continue cooking over medium heat until garlic becomes fragrant. Be sure the garlic does not burn. Once the garlic is fragrant, remove the garlic and enjoy them as a snack, rub over bread, or add to another dish - the caramelized garlic are delicious. Add beans to the pot with onions - do not drain. After each can has been added, rinse the cans with ½ cup of water to remove any remaining liquid. Add an addition
