Description
📗 Save Over $1,000 on Meat With My Butcher’s Money-Saving Methods: salpetralia.com
Most Costco steaks come out gray and wet because they get salted while the pan heats. Salt the same steak the night before, leave it uncovered on a rack, and it browns in a minute, stays juicy and tastes seasoned to the middle.
In this video, I show you what to do to your Costco steak before it ever hits the pan:
The head start: how much kosher salt per pound, and why the rack and the open shelf matter
The forty-minute rule if you forgot, and the thin steak where salting at the pan is fine
Why the thick pack costs the same per pound and comes out juicier
The label words "mechanically tenderized" and "blade tenderized," and why that steak always goes to 145°F
Low oven first, hot pan last, pulled at the USDA 145°F with a three-minute rest
The rest and the slice across the grain
The arithmetic: about $3 of beef saved on a two-pound pack, about $156 a year
Salt will not turn a Choice steak into a Prime one, and it will not save a steak cooked past the number. It gives the steak you already paid for its best night. A heavily marbled Prime steak forgives more, and a thin skirt steak needs no rack at all.

What did you pay per pound for your Costco steak, which cut was it, and what town and state are you in? I read every one of these.
Salt it tonight. Cook it tomorrow.
