📗 Save Over $1,000 on Meat With My Butcher’s Money-Saving Methods: salpetralia.com
At Costco, the boneless pork chop tray and the whole boneless pork loin a few steps over are the same muscle. One comes sliced and one comes whole, and the slicing is about fifty cents a pound you can keep.
In this video, I show you the butcher method for pork chops at Costco, from the two tags to the freezer:
Read the price per pound on both tags: about $2.99 for the Kirkland boneless chops, about $2.49 for the whole loin
Turn the loin over and read the label for solution added before it goes in the cart
Trim the fat cap to a quarter inch and weigh the trim, so you compare the honest pound
Find the three parts of the loin: the rib end, the center and the sirloin end
Cut the rib end and center two fingers thick, salt them the night before, and pull them at 145°F with a three-minute rest
Cut the seamy sirloin end thin and pound it into cutlets
Buy the tray on the weeks it is cheaper per pound than the loin
Freeze the chops flat, two to a pack, dated, and thaw them in the refrigerator
The arithmetic: about $4 a loin, about $48 a year at a loin a month, past $50 with two sale weeks
Fifty dollars is a year of weekly pork chops, not one trip, and Costco prices vary by warehouse and week. If you cook for one, your freezer is full or a knife is hard on your hands, the chop tray is a fair buy. Pay the fifty cents and enjoy it.

What do the whole boneless pork loin and the boneless chop tray cost per pound at your Costco, and what town and state are you in? I read every one of these.
Read both tags. Cut it thick. Freeze it flat.
