Description

Built to Last — my old-world household manual: https://ezrakaine.com This flour is eleven months old. Store-bought, sealed, kept dry the whole time — and it is already sour enough to smell from here. This jar is wheat berries. Whole, never ground. Daadi Amos put these up the winter before he died. That is nineteen years in this jar, and I made biscuits from a cup of it yesterday morning that Miriam could not tell from grain we bought last month. Eleven months to go bad. Nineteen years and still better than store-bought. Same plant, same shelf, near enough. And the difference is not luck, and it is not some old-world trick nobody remembers. It is one single fact, and it is the reason for near everything on this list. Number nine is the one people get exactly backwards, and stored the wrong way it rots clean through by January. Number two is not the joke people think it is — men lived on it for years at a stretch, and there is a trick to eating it that most folks alive today have never heard, skip it and it will actually hurt you. And number one is not a food I put up in a jar at all. It is a food I keep alive, same as an animal, and it is older than I am. Here is the one thing worth taking from all seventeen of these, and it is not the list itself. Every food is afraid of exactly one thing — water, mostly, sometimes air, sometimes warmth when it wanted cold, or cold when it wanted warm. Find the one thing a food is afraid of, take that away from it, and keeping it stops being a mystery. Not one machine in any of this. No refrigerant, no compressor, no power line running to any of it. Tell me in the comments which one you picked, and whose kitchen you first heard of it in, and what county they kept it in. I would like to get some of that written down while there is still somebody around who remembers it firsthand. Seventeen things that do not spoil, and not one of them ever needed electricity to manage it. Next time — the one thing in this kitchen Mammi Esther swore by for scouring cast-iron clean, and there is not one speck of soap anywhere in how she did it.
