📕 Get The Lunch Lady's Home Cleaning Handbook, every method in this video written down with the amounts, in the order you would really do them:

An inspector walked through my kitchen twice a year for thirty-five years, and not once did he expect the whole room to be clean. He expected the right things clean. There is an order behind that, it is written down, and nobody has ever handed it to you.
Here is the short version. The food service rules I worked under sort cleaning into three speeds. Four hours for the things food actually touches. Twenty-four hours for cooking equipment, which means the stove waits until tomorrow in a building the state inspects. And for everything else, no clock at all, just "do not let it build." Your house has the same three speeds in it. You have been running all of it at the first one.
Eleven jobs in this video, sorted into those three speeds, starting with the four you are allowed to put down tonight. The last one is not cleaning at all, and it is the one that makes every other job smaller.
I'm Mrs. Doris. Thirty-five years behind a school lunch line in Scioto County, Ohio. I show you what actually works, I tell you where it stops, and I correct myself out loud when I have had it wrong.
⚠️ THE FOUR THINGS IN HERE THAT DO HAVE A CLOCK
- Your dryer. Lint screen every load, duct behind the machine once a year. Failure to clean is the leading factor in home clothes dryer fires.
- Anything that boiled over near a burner. That is fuel next to a flame, and it does not wait until tomorrow.
- A leak from raw meat in the refrigerator. Out now, shelf washed and dried now.
- The board and the knife, between raw food and ready-to-eat. Every time.
⚠️ AND TWO SAFETY LINES
- Nothing above your reach. Not off a stool, not off a chair, not off the edge of the tub. A clean door frame is not worth a fall.
- Wash the trash can outside with a hose or in the tub, never in the kitchen sink, and wash your hands after.
SOURCES I USED
- Ohio Administrative Code 3717-1-04.5, equipment cleaning frequency
- U.S. Fire Administration, "Clothes Dryer Fires in Residential Buildings"
- Home Ventilating Institute, bathroom ventilation and kitchen ventilation guidance
- EPA, "A Brief Guide to Mold, Moisture and Your Home"
- USDA FSIS, "Leftovers and Food Safety"
Tell me one job you do every week that nobody in your house has ever noticed. I think a lot of us are going to write down the same thing.
