Get Bertha's Cleaning Book, every method for the whole house, written down: https://berthacleans.com
Pull out the oldest sheet pan in the drawer under your oven. Brown corners, a dark rolled edge, a cloudy amber map across the middle. You scrubbed it with steel wool until your wrist ached and you are ready to throw it out. It is not because you were lazy, mija. That brown is years of thin baked coats of oil, and nobody taught you that a pan has to be read before it can be cleaned.
READ YOUR PAN FIRST: plain dull silver = bare aluminum (most sheet and pizza pans). Dark and slippery = nonstick. See-through = glass. Heavy and mirror shiny = stainless (its own video).
THE METHOD:
1. Gloves on. Pan dry in the sink. Shake baking soda thick over every brown spot
2. Pour 3% hydrogen peroxide slowly until it turns into a soft paste. Work it into the corners and edges
3. THE PART EVERYONE SKIPS: lay a wet, wrung-out kitchen towel over the paste and leave it all night. The paste only works while it is wet. Dry paste = white crust and no result
4. Morning: scrub with a plain pad (fine steel wool on bare aluminum only) in long strokes WITH the grain, never circles. Rinse and dry
5. Stubborn shadows: the oxalic scouring powder in the little gold can, a few drops of water, 1 to 2 minutes, scrub with the grain, rinse well right away
6. The rolled rim: a wooden skewer wrapped in a rag corner, dipped in the paste
7. Muffin tins: paste in every cup, towel on top, a cotton ball in the morning
NEVER on bare aluminum: oven cleaner (the lye eats the metal and leaves it dark and rough for good), a dishwasher tablet, or the dishwasher itself. Hand wash only.
NONSTICK: soda + peroxide under the towel, then only the soft side of a sponge. No steel wool, no oxalic powder. Peeling or flaking coating = time to let it go. GLASS: same paste, same night, a plastic scraper.
SAFETY: never mix peroxide with vinegar, never let the oxalic powder near bleach, open a window.
HONEST WORDS: a twenty year pan comes back clean and smooth, not brand new. And the dark that stays is seasoning. A dark pan bakes the bottom of the bread golden, a shiny pan leaves it pale. Lo que se cuida, dura.
THE HABIT: stop using cooking spray on bakeware (it bakes into the sticky brown on the edges). A little oil or parchment, wash the same night once it cools, dry aluminum by hand right away.
Tonight, give your worst pan the paste and the towel. Tell me in the comments whose kitchen that pan lived in before it was yours, how many years it has been in your drawer, and your county. I read every one.
