Description
You can ruin a forty dollar steak in your own garage, six weeks after you paid
for it.
Not by leaving it too long. By the speed. Freeze it slowly and the ice inside
grows big enough to cut the meat from the inside. Thaw it wrong and all that
damage runs out into the sink, and the steak comes to the table dry and
rubbery, and you blame the cut.
I am Earl. Thirty one years behind the meat counter in three different stores.
For all of those years people asked me across that counter whether freezing
would hurt their beef.
Twelve things about the freezer in your house, counting down. Why frozen is
not paused. Why the spot you choose matters more than the number on the dial.
Why you never freeze forty pounds at once. What freezer burn really is, and
why the frost free freezer in your kitchen is drying your meat on purpose.
The wrap that costs almost nothing and decides whether beef lasts a year or
two months. And the only way of thawing that does not cost you anything.
Number one changes every weeknight, and almost nobody believes it until they
try it.
If you have not seen the video about buying half a cow, watch that one next.
That was about filling the freezer. This one is about what happens to it once
the lid is shut.
Nobody paid me for this. There is nothing here to buy. I do not work for any
store.
Your homework takes five minutes tonight. Pull out the oldest package of beef
in your freezer and look at the corners. If there is a dry grey patch, that is
air. Tell me what you found and how old it was. I read every one.
