Description

The most expensive steak in the case costs about twenty five dollars a pound. It tastes the least of beef. The steak next to it, at about eighteen, tastes more like beef. That seven dollar difference is not buying you meat. It is buying you a word. I am Earl. Thirty one years behind the meat counter in three different stores. For all of those years I printed those words on labels. Filet. Delmonico. London broil. I knew which ones meant a muscle and which ones meant a price, and I never said so out loud. Ten names in that case, counting down. For every one: what the meat actually is, and what to buy instead. A name that is a recipe, not a cut. A name with no fixed meaning at all, that means a different steak in every store. Cubes that cost more a pound than the roast they were cut from. A steak with a handle on it, where you pay steak money for up to a pound of bone. A grind that sounds like an upgrade and eats like a downgrade. A Japanese word that does not have to mean in America what you think it means. And a word that describes nothing but the colour of the animal's coat. On that last one I want to be fair, because it matters. There are certified programs built on that name that add real rules about marbling, age and size. Those are telling you something about the meat. The word on its own is telling you the cow was black. Number one is the most expensive steak in the building. The one people come in for on a birthday, or an anniversary, or the night a son comes home. I cut it, I wrapped it, I took the money, and I never once said what I would have carried home instead. If you have not seen the video about why beef costs what it does now, watch that one next. This list is what to do about it. Nobody paid me for this. There is nothing here to buy. I do not work for any store. Tell me which of these names you bought thinking it meant something. I read every one. --- About this channel: this is a fully owned and operated media property.
