Description
How Sweet Potato Noodles Are Made
This is how traditional sweet potato noodles are made by hand in China, using a simple metal bucket instead of a noodle machine. Unlike wheat noodles, these are made mainly from sweet potato starch mixed with water to form a thick, elastic paste.
The worker fills a perforated bucket with the mixture, then repeatedly presses it through small holes. This manual extrusion process creates dozens of long, uniform strands that fall directly into hot water. The heat triggers starch gelatinization, turning the soft paste into noodles that can hold their shape.
Once cooked, the noodles are transferred into cold water, where rapid cooling helps firm their structure and reduce stickiness. Another worker then separates and gathers the strands into long bundles. The result is a smooth, slightly translucent noodle with a chewy texture. These noodles can be eaten fresh or dried for storage, and are commonly used in Chinese soups, stews, and hot pots.
