Description
A seventy dollar steak can be ruined in ninety seconds.
Not in the pan. On the board, after the fire is off. I have watched it happen
more times than I can count, and the man doing it always looks pleased with
himself. He cooked it right. Then he picked up a knife and handed part of it
back.
I am Earl. Thirty one years behind the meat counter in three different stores.
Those five minutes between the pan and the plate were the only part I could
never control, because they happened in your kitchen, with your knife.
Twelve things happen in those five minutes, counting down. Why the steak you
pull off the heat is not the steak you eat. What the foil tent does to the crust
you just paid for. Why a cold plate undoes the rest. Why five minutes is right
and fifteen is not. Where the puddle on your board comes from, and why it is not
water. What a dull knife does to a steak. And why a ribeye does not have one
grain, it has two, and the best bite on it runs the other way.
Number one is worth more than the grade you paid for. A cheaper steak cut one
way beats an expensive steak cut the other way, and it costs you nothing to do.
And somewhere in there I tell you what I did to every steak before I let a
customer taste it. It was not a lie. It was not entirely honest either.
If you have not seen the video about the names printed on the package, watch
that one next. That was about what you pay for. This one is about what you
keep.
Nobody paid me for this. There is nothing here to buy. I do not work for any
store.
Your homework costs you one steak. Cut the first slice the way you always have.
Cut the second one across the grain. Eat them one after the other and tell me
which one you would serve to somebody you were trying to impress. I read every
one.
