Description
This Avocado and Chickpea Sandwich is creamy, crispy, and loaded with plant-based protein — the kind of breakfast that actually keeps you full until lunch.
Half the chickpeas get mashed for creaminess, the rest stay whole for texture, then everything comes together with ripe avocado, fresh herbs, and a squeeze of lemon. On top, crispy air-fried chickpeas add a serious crunch.
If you're collecting avocado sandwich recipes, this one earns its spot. It's essentially a chickpea avocado salad turned into a sandwich — creamy, savory, and way more filling than plain avocado toast.
Ingredients:
5oz/150g canned chickpeas
1/3 tsp Sweet paprika
1/3 tsp garlic flakes
1/3 tsp dried parsley
1/3 tsp onion powder
Avocado oil
1 avocado
1/2 green lemon juice
1/3 cup diced red onion
Cilantro
1/4 tsp chili flakes
1/3 tsp garlic flakes
1/2 tsp dijon mustard
Salt
Olive oil
2 pcs sourdough bread
Cheddar cheese
I'll show you my roasted chickpeas recipe for that crispy topping, plus a trick I use for every bread sandwich recipe: toast the bread on one side only, and put that toasted side facing in. It keeps everything crisp instead of soggy.
The mashing technique borrows from how to cook guacamole with avocado — mash enough for creaminess, but leave texture so it doesn't turn to paste.
What makes this recipe great:
🥑 Creamy avocado meets protein-packed chickpeas
🫘 Crispy air-fried chickpeas on top for crunch
🍞 Toasted bread that stays crispy, not soggy
💪 High in plant-based protein and fiber
⚡ Ready in about 10 minutes
This is one of my favorite chickpea breakfast recipes and a solid addition to any bread and avocado recipes rotation. It's a genuinely creamy sandwich recipe that doesn't rely on mayo.
Whether you're after fresh healthy breakfast ideas, wholesome healthy meals with avocado, or more easy instant breakfast recipes for busy mornings, this avocado bread sandwich delivers. It's earned a permanent spot in my breakfast recipes rotation.
