Description

I'll never fry onions again! This onion is so delicious that I make it twice a week! RECIPE 2 onions Olive oil 2 eggs Salt Black pepper 5 potatoes 1 teaspoon butter 80 g cheese Sun-dried tomatoes Salt Paprika Fresh dill For the sauce 2 tablespoons Greek yogurt Zest of 1 lime Juice of 1 lime 1 garlic clove 5 pickled cucumbers Green onions Italian herbs Salt Black pepper Peel the onions. Cut out the center of each onion, leaving one or two outer layers intact. Place the onions into a muffin or cupcake pan to keep them stable. Brush the onions with olive oil. Beat the eggs with salt and black pepper. Pour the egg mixture into each onion. Peel the potatoes, cover with water, and cook until tender. For the sauce, combine the Greek yogurt, lime zest, lime juice, minced garlic, finely chopped pickled cucumbers, chopped green onions, Italian herbs, salt, and black pepper. Mix until smooth. Drain the cooked potatoes. Add the butter and mash until smooth. Grate the cheese and stir it into the mashed potatoes. Finely chop the sun-dried tomatoes and mix them into the potatoes. Season with salt and paprika. Add finely chopped fresh dill and mix well. Remove the baked onions from the oven. Slice the baked onions together with the egg filling. Serve with the creamy mashed potatoes and the refreshing yogurt sauce. This baked onion recipe is simple, comforting, and full of flavor. The combination of tender onions, creamy potatoes, melted cheese, and fresh yogurt sauce creates an unforgettable family dinner that you'll want to make again and again. Enjoy your meal!
