Description

My grandmother taught me to pay attention to the little things we threw away. Green onion roots are one of those things. I used to cut them off without a thought, then find the rest of the bunch turning soft in the refrigerator a week later. If that sounds familiar, here’s what I do now. I decide what I want the onions for before I put them away. For soup, eggs, fried rice, or anything else going into a hot pan, I wash and chop the green onions while they’re still good, then freeze them in a labeled bag. They won’t be crisp when they come out, so I use those for cooking. For new fresh greens, I save the white ends with the roots attached. Stand them in a shallow dish of water in a sunny window, and new green shoots can grow from the tops. That grows another little supply; it doesn’t keep the original bunch fresh forever. So please don’t believe a promise of the *same* green onions staying fresh for a year without a freezer. I’d rather give you two useful jobs for the bunch you bought than one lovely-sounding trick that doesn’t hold up. What do you use green onions for most—cooking or that fresh, crisp finish on top? Tell me below. And save this for the next time you buy a bunch and know you won’t use it all. Subscribe, and I’ll keep showing you how to make more of the food already in your kitchen. #greenonions #scallions #foodstorage #regrowingvegetables #reducefoodwaste #cucinapovera #kitchentips
