Twenty tricks, and not one of them is a gadget.
My granddaughter shows me cooking videos on her telephone. Some of them are good. And some of them would have got a person sent home from my kitchen before the first bus unloaded.
Here is the difference. A school kitchen does not get to try something and see how it goes. Four hundred children, a dollar and five cents a tray, and a menu board that was written three weeks ago. Nothing survives in a place like that unless it works every single time, for thirty-five years, in the hands of six tired women.
Every one of these goes IN the food. No equipment. No homework.
Number thirteen takes the tin taste out of a can and it is one pinch.
Number nine is already in your cupboard and it beats the can at the can's own job. And number one is three words long.
Three things to write on a card. SALT, ACID, OR FAT - that is the answer to what is wrong with the pot, almost every time, and you run them in that order. SEASON THE FLOUR, NOT THE MEAT - the flour takes the seasoning straight back off the meat and it goes in the bin. ONE PINCH, THEN TASTE - the soda in the tomatoes and the sugar in the can are the same move and a heavy hand ruins both.
