If you asked a hundred folks my age what the cake of their childhood was, the one that came out for a birthday, I believe near all of them would tell you the same thing. A golden yellow cake with chocolate frosting. That was the birthday cake of a whole country, and it is still, to my mind, the finest one there is. A plain, honest, golden cake, soft and sweet and tender, under a thick swoop of dark chocolate frosting. Today I give you the whole of it, the cake and the frosting both, the way my family has always made it.
Now, do not make a mystery of a yellow cake, for it is nothing in the world but a good vanilla cake. The gold comes from the butter and the egg yolks, from the whole richness of a good egg, and that richness is exactly what makes it the comfort it is. It is not a trick. The gold is already in your butter and your eggs, waiting to come out.
INGREDIENTS (one layer cake)
For the cake:
2 1/4 cups all-purpose flour
1/4 cup cornstarch (or use 2 1/2 cups cake flour instead of both)
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1 1/4 cups sugar
1 tablespoon vanilla
3 eggs plus 2 egg yolks
1/4 cup vegetable oil
1 cup buttermilk (or 1 cup milk soured with 1 1/2 tablespoons vinegar)
For the chocolate frosting:
1 cup butter, softened
3/4 cup cocoa powder (bloomed in a little melted butter)
3 to 4 cups powdered sugar
1/4 cup milk or cream
1 teaspoon vanilla
Pinch of salt
Here is what you will learn:
✔ Why a yellow cake is just a rich vanilla cake (the gold is butter and yolks)
✔ Why you grease AND flour the pans (so the cake slips free clean)
✔ Why you cream the butter and sugar pale and fluffy (the air that lifts it)
✔ Why the extra egg yolks make it golden and tender
✔ The little splash of oil that keeps it moist a day or two later
✔ Why you must NOT overmix (and the alternating wet-and-dry method)
✔ The homemade buttermilk trick for a
