That tartar sauce in the jar, pale and sweet and gluey, has made a whole people forget what a real tartar sauce is. Today I am going to show you, for the tartar sauce you make yourself in about three minutes, from a few things you likely already have, is so far beyond that jarred stuff that once you taste the real thing, you will never buy a jar again. That is not a boast, it is just the plain truth of it, and you will see. It is a cool, creamy, tangy sauce, sharpened with pickle and brightened with lemon and dill, the perfect cool bright crown for your fried fish or your salmon patties.
Now, do not fear making your own sauce, for it is no factory thing, it is a bowl and a spoon and a few plain things stirred together. And here is the honest difference, the jarred stuff is made to sit on a shelf for a year, dulled and heavily sweetened, where a real tartar sauce is sharp and bright and savory, barely sweet at all. That is the whole secret, and you cannot get it from a jar, only from your own hand.
INGREDIENTS (makes about 1 cup)
1 cup mayonnaise (homemade or a good store one)
1 dill pickle, chopped fine (or sweet pickle for a milder sauce)
1 tablespoon pickle brine (optional, from the jar)
1 tablespoon fresh lemon juice
1 tablespoon fresh dill, chopped (or a little dried)
1 teaspoon Worcestershire sauce
1 teaspoon mustard (Dijon or prepared)
1 tablespoon grated onion or chopped chives (optional)
1 tablespoon capers, chopped (optional)
Salt and pepper to taste
Here is what you will learn:
✔ Why the real sauce is sharp and savory, NOT sweet like the jar
✔ What mayonnaise actually is (and why the jar holds nothing you cannot make)
✔ Why the chopped pickle is the whole soul of the sauce
✔ Dill for a sharp sauce, sweet pickle for a milder one
✔ The pickle-brine splash that lifts it (save that jar juice)
✔ The fresh lemon and dill that brighten it
✔ The Worcestershire and
