There is a sorrow that comes to a great many supper tables, and it is a dry pork chop, cooked hard and fast until it is gray and tough as a bootheel. And so a lot of folk have given up on the pork chop, believing it a dry, disappointing thing. They gave up too soon. Today I am going to show you the old way that turns that same cheap cut into one of the most tender, savory, comforting suppers a plain kitchen ever set down, and it is called smothering, chops browned and then buried in a thick rich onion gravy and braised low and slow until they are fork-tender.
Now, do not fear a smothered chop, for it is no fancy thing. This is not a creamy mushroom dish nor a pan sauce splashed with spirits, it is a plain honest smother, chops and onions and a good brown gravy, the thrifty supper of working families, nothing in it you cannot pronounce. And here is the beauty, the cheaper, tougher chop is the BEST chop for this, for the long slow braise melts its toughness into tenderness.
INGREDIENTS (serves 4)
For the chops:
4 bone-in pork chops, thick cut (shoulder chops are ideal)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup flour (for dredging)
2 tablespoons oil or lard (for searing)
For the onion gravy:
2 to 3 onions, sliced
2 tablespoons flour (if needed to thicken)
2 1/2 cups beef or chicken broth
1 tablespoon Worcestershire sauce
1 to 2 cloves garlic, chopped (optional)
1/4 teaspoon dried thyme (optional)
Salt and pepper to taste
Here is what you will learn:
✔ Why the cheap, tough shoulder chop is the BEST chop for smothering
✔ Why you season and flour-dredge the chops (it builds the gravy from step one)
✔ The deep sear that builds all the flavor
✔ How to cook the onions down sweet and golden (they are half the dish)
✔ How to build a thick rich onion gravy from the drippings
✔ How to smother and braise low and slow until fork-tender
✔ Why slow-and-wet melts a tough cu
