Picture a weeknight, the end of a long day, with next to nothing in the house and no time and no money to make much of anything. In a great many kitchens that is a moment of despair, the moment folk reach for the telephone. But in the old thrifty kitchens, that very same moment was when a good cook reached up into the cupboard and took down a can of salmon, and in twenty minutes set down a hot, crisp, savory supper the whole family loved, for almost nothing. That supper is salmon patties, and today I am going to show you how to make it right.
Now, do not look down on the humble can, for it is the whole wonder of this dish. A tinned thing that waits patient in your cupboard against a hard day becomes, in a few minutes, a hot crisp supper finer than most folk could make from fresh, a crunchy golden crust outside giving way to big tender flakes of savory salmon within. It is the thrifty old cupboard supper at its finest.
INGREDIENTS (makes about 8 patties)
2 cans salmon (about 14 to 15 oz total), drained
1 tablespoon butter and 1 tablespoon oil (for the vegetables)
1/2 onion, finely chopped
1/2 red bell pepper, finely chopped
1 cup breadcrumbs
2 eggs, beaten
1 tablespoon mayonnaise
1 teaspoon Worcestershire sauce
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Butter and oil, for frying
Here is what you will learn:
✔ Why the humble can of salmon is the whole foundation (and the soft bones mash right in)
✔ The fresh-salmon option if you would rather
✔ Why you soften the onion and pepper first (sweet, not sharp)
✔ The egg-crumb binding that holds them together
✔ The three jobs of a patty (body, glue, moisture) so you can fix any batch
✔ Why you chill the mixture so they hold their shape
✔ Why you fry in butter AND oil (flavor without burning)
✔ Why you brown one side full and flip only once
✔ What to serve them with, and the cool tangy sauce they want
✔ How to mak
