Let me show you today a supper that near everyone of a certain age remembers and near nobody under a certain age has ever heard of, a humble, thrifty, comforting old dish that fed working families and soldiers and farm hands for generations, and then quietly slipped away. Chipped beef on toast. Thin shreds of dried beef warmed in a rich creamy milk gravy, poured hot over crisp buttered toast, and that is the whole of it, one of the most comforting cheap suppers there ever was. It cost almost nothing, it came together in ten minutes from things that kept on a shelf, and it filled a belly warm and good on the hardest of days. It deserves to be remembered.
Now, do not look down on this humble dish, for a humble dish made well, hot and creamy and savory over crisp toast, is a thing a body is truly glad to eat. That dried beef gives it a deep, salty, savory, almost smoky bite you cannot get any other way, and the whole genius of the old thrifty cooking is right here, to make the cheapest thing genuinely good.
INGREDIENTS (serves 4)
1 jar or package dried beef (about 4 to 5 oz), torn into shreds
4 tablespoons butter
1/4 cup flour
2 to 2 1/2 cups milk (a splash of cream optional)
1 teaspoon black pepper (plenty), or to taste
Salt only if needed (the beef is salty)
Good sturdy bread, toasted and buttered
Here is what you will learn:
✔ What dried (chipped) beef is and how it was preserved
✔ Why you taste and rinse the beef if it is very salty
✔ Why you frizzle the beef in butter first (it wakes up the flavor)
✔ The pale milk-gravy roux, the same bones as any white gravy
✔ Why you add the milk slow and stirring (and why that stops lumps)
✔ Why you pepper freely but HOLD the salt (the beef salts it for you)
✔ Why a sturdy, well-toasted bread matters (so it does not go to paste)
✔ The old army and hard-times history of the dish
✔ Ways to make it your own (egg, peas, onion, over biscuit or potato)
✔ How it thickens as it sits and how to loosen it back
You do not need a box or a drive-through. You need a little dried beef, some flour and milk, and a few slices of bread. And once you taste it, you will understand what the old kitchens always knew, that there is no shame in a cheap good supper, only wisdom, and the humblest old dishes are often the most comforting there are.
Now tell me something down in the comments. Did your family make chipped beef on toast, and did your father or your grandfather call it by one of those old army names, for a great many learned it in the service and brought it home. And how did yours have it, with the egg, with the peas, over toast or biscuit? And for those who have never had it, will you give this humble old supper a try? I would dearly love to hear those memories. Tell me.
Next time I am going to show you another of these humble creamed-on-toast suppers, a cousin to this one and just as thrifty and comforting, creamed eggs on toast, hard-boiled eggs folded into that same kind of rich creamy gravy and spooned over toast, a wonderful cheap supper or breakfast that uses up eggs and fills a family for next to nothing. Next time, old-fashioned creamed eggs on toast.
Until then, take good care of the ones at your table. And keep a kitchen that knows there is no shame in a cheap good supper, only wisdom, and that the humblest old dishes are often the most comforting there are.
