There is a little packet of powder that sits in a great many kitchens, with a picture of rich brown gravy on it and a promise that you can have that gravy by stirring the powder into hot water. And I understand why folk reach for it, for they have been told that gravy is a hard thing, a tricky thing that lumps and fails. But I am here to tell you that a real brown gravy, made from scratch with your own hand, is one of the easiest things in all of cooking, that it takes about five minutes and three things you already have, and that it is so far beyond that salty powder that once you make your own, you will wonder why you ever bought the packet.
Now, do not make a mystery of gravy, for there is none. It is fat and flour cooked together, and then good broth stirred in until it thickens. That is all, three things and a few minutes. Master that simple knack and you can make a rich silky brown gravy for the rest of your life without ever once looking at a recipe, the perfect crown for your mashed potatoes, your roast, your meatloaf, your biscuits.
INGREDIENTS (makes about 2 cups)
2 tablespoons butter (or lard, or saved meat fat)
2 tablespoons flour
2 cups beef broth (or chicken broth; homemade is best)
1/4 teaspoon onion powder, or 1/2 onion chopped fine (optional)
1/4 teaspoon garlic powder (optional)
1 teaspoon Worcestershire sauce (optional, for depth)
A pinch of thyme or rosemary (optional)
Salt and pepper to taste
Here is what you will learn:
✔ Why gravy is just fat, flour, and broth (no powder, no packet)
✔ Which fat to use (butter, lard, or saved meat fat)
✔ The equal-parts rule for a roux that thickens right
✔ Why you MUST brown the roux (for color, flavor, and to cook out the raw taste)
✔ The warning that saves it (browned is glorious, burnt is ruined)
✔ Why you add the broth slow and stirring (and why that stops lumps)
✔ The strainer rescue if a lump sneaks throu
