Let me show you today one of the cleverest and most delicious old thrifty dishes there is, chicken croquettes, little cakes of tender shredded chicken bound creamy and rich, breaded in crumbs, and fried golden and crisp, so you have a crispy crunchy outside giving way to a soft, creamy, savory chicken inside, a wonderful morsel. And here is the beauty and the heart of it, these are made from leftover chicken, from the picked-over remains of a roast chicken, turned into a whole new glorious dish, so it is thrift at its finest, the making of something special from what was left.
Now, do not fear a croquette, for it is no restaurant trick nor frozen-box treat, it is leftover chicken and a bit of thick sauce and potato, bound and breaded and fried by your own hand. They are lovely as an appetizer for company, or a supper with a salad, and a grand way to use up that leftover bird, finer than any frozen box, made of what would have been scraps.
INGREDIENTS (makes about 12 croquettes)
For the croquettes:
2 cups cooked chicken, shredded fine (leftover roast is perfect)
2 tablespoons butter
1/2 onion, finely chopped
1 clove garlic, minced
3 tablespoons flour
3/4 cup chicken broth
1 cup potato, boiled and riced (about 1 medium)
2 egg yolks
1/2 cup grated cheddar (optional)
1/4 teaspoon freshly grated nutmeg
2 tablespoons chopped parsley
Salt and pepper to taste
For breading and frying:
1/2 cup flour
2 eggs, beaten
1 1/2 cups breadcrumbs
Oil, for frying
Here is what you will learn:
✔ How to turn a leftover roast chicken into a crispy golden treat
✔ The thick roux-based sauce that binds them creamy within
✔ Why riced potato and egg yolks give body and hold them together
✔ Why you MUST chill the mixture and the formed croquettes (twice)
✔ The classic three-step breading (flour, egg, crumbs) with no bare spots
✔ Why the thick binding + chilling + full breading keep them from fa
