Description
Imagine this: you drop everything into a baking dish, close the oven door, and go sit down. Ten dinners where nothing gets boiled and nothing gets browned first — dry pasta, raw rice, whole eggs and cold batter all go straight in, and the oven does the rest. A Cowboy Casserole out of three cans, a Creamy Salmon Pasta that cooks its own pasta, a Toad in the Hole that climbs the dish in golden waves, and a Corn Pudding that cannot decide if it is supper or dessert. One dish in, one dish to wash.

🍽️ FULL RECIPES (1-2 servings)
1. CREAMY SALMON PASTA
1 salmon fillet • ¾ cup DRY short pasta • ¾ cup cream • ½ lemon. Butter the dish, scatter the DRY pasta over the bottom, salmon on top skin side down, cream over until the pasta is just covered. Cover with foil. 375°F, 25 min.
👉 Secret: grate lemon PEEL over the top, not juice. Use a SHORT shape — long noodles sit above the cream and go leathery.
2. COWBOY CASSEROLE
½ lb ground beef • 1 can white beans, drained • 1 can corn, drained • ½ cup cheddar. Break the RAW beef into a THIN even layer, season, tip beans and corn over, stir once. Cover. 375°F, 35 min, then cheese on top, 10 uncovered.
👉 Secret: a spoonful of the bean can liquid goes back in — it tastes like it simmered for hours. A solid slab of beef steams grey inside.
3. BAKED GNOCCHI SORRENTINA
1 packet gnocchi, DRY from the packet • 1 jar tomato sauce • 1 ball mozzarella. Tip the dry gnocchi in, sauce over, stir so every one is coated, TEAR the mozzarella over the top. 375°F, 25 min covered and 10 uncovered.
👉 Secret: do NOT boil them first — dry, they drink the tomato and keep a little bite. Torn cheese goes golden, sliced melts flat.
4. LEMON BUTTER CHICKEN AND RICE
2 chicken thighs • ½ cup DRY rice • 1 cup broth • ½ lemon, sliced • 1 tbsp butter. Dry rice over the bottom, broth over it, thighs on top skin side up, lemon rounds among the rice, butter on each. Cover. 375°F, 45 min, then 15 uncovered.
👉 Secret: THIGHS, never breast — the fat runs into the rice. Do not lift the foil: the steam that cooks the rice gets out.
5. CREAMY POTATO GRATIN
3 potatoes, sliced thin • 1 cup milk • 1 clove garlic • salt. Rub the cut garlic round the dish, lay the slices in overlapping rows, milk over until it just reaches the top, salt BETWEEN the layers. 350°F, 60 min uncovered.
👉 Secret: do NOT rinse the slices — that starch is the only thing thickening the dish, and it turns milk to cream.
6. BLACK-EYED PEA BAKE
1 can black-eyed peas, drained • handful of chopped greens • ½ cup diced ham • splash of water • plenty of pepper. Everything in, stir, cover. 350°F, 40 min.
👉 Secret: a teaspoon of vinegar right before the table lifts the whole dish. Do NOT salt at the start — the ham and peas bring their own.
7. LAZY EGGPLANT PARMESAN
1 eggplant in ½-INCH rounds, skin ON • 1 jar tomato sauce • 1 ball mozzarella. Layer straight in raw: sauce, eggplant, sauce, eggplant, cheese. No frying, no salting, no draining. Cover. 350°F, 60 min, uncovered the last 15.
👉 Secret: leave the SKIN on — it holds each slice together, so you get layers instead of mush.
8. TOAD IN THE HOLE ⭐
4 sausages • ¾ cup flour • 2 eggs • ¾ cup milk • 1 tbsp oil. Whisk a loose batter and let it rest. Get the oil PROPERLY HOT in the dish, lay the sausages in raw, pour the COLD batter around them. 425°F, 30 min — and do not open the door.
👉 Secret: cold batter into a hot dish is what makes it climb. Open the oven and it drops for good.
9. OVEN SHAKSHUKA
1 can chopped tomatoes • 1 pepper, sliced • 1 onion, sliced • 4 eggs. Stir pepper and onion into the tomatoes in the dish, bake UNCOVERED 375°F 25 min until thick. Make deep hollows with a spoon, slide an egg into each, back in 8-12 min.
👉 Secret: bake the sauce uncovered first — covered it stays thin and the eggs sink. Take it out while the whites still look barely done.
10. CORN PUDDING
1 can corn, UNDRAINED • 2 eggs • ½ cup milk • 2 tbsp flour • 1 tsp sugar. Corn in with all its liquid, beat eggs with milk and flour until smooth, pour over, stir once. 350°F, 40 min.
👉 Secret: take it out with a WOBBLE still in the middle — it keeps setting for ten minutes after.
Most keep 3-4 days covered. The eggplant and the beef bake freeze well in single portions; the toad in the hole will not keep its height, so eat that one fresh.
