Description

Ten easy dinners for one or two people, and not one of them asks you to stand at the counter for more than ten minutes. The oven, the foil and the lid do the rest while you sit down. A julienne that goes from burner to grill in one dish, a leek and potato bake where nothing is cooked before it goes in, and a Persian herb cake made of nothing but greens and eggs. ⏱️ DINNERS IN THIS VIDEO: 0:32 1. Chicken and Mushroom Julienne (one dish) 3:20 2. Cheesy Leek and Potato Bake (the leek goes in raw) 6:11 3. Asparagus with a Poached Egg (4 minutes) 8:25 4. Shrimp Foil Packet (no pan to wash) 10:38 5. Zucchini Noodles with Pesto (2 minutes, not 10) 12:52 6. Savory Clafoutis (looks like a restaurant) 15:16 7. Baked Haddock and Corn (3 minutes) 17:30 8. Kuku Sabzi (2 ingredients, nobody remembers it) 19:57 9. Crab and Avocado (the burner never goes on) 22:02 10. Beef and Broccoli (like takeout) 🍽️ FULL RECIPES (1-2 servings), pot sizes in the headings 1 CHICKEN AND MUSHROOM JULIENNE (7-inch oven-safe skillet) 1 rotisserie chicken torn small • 1 package mushrooms chopped small • tub of sour cream • handful shredded cheese. Butter in, mushrooms in, brown them STILL. Chicken in. OFF THE HEAT, sour cream through, cheese over, broiler 3 min. Secret: stir a spoonful of the cheese INTO the sour cream first. Serve over instant mashed potatoes. 2 CHEESY LEEK AND POTATO BAKE (6-inch gratin dish) 2 potatoes ALREADY BOILED • 1 leek • 1 clove garlic • handful sharp cheddar. Potato coins over the bottom, HALF the cheddar, raw leek half moons and grated garlic, rest of the cheddar. 25 min at 400F. No boiled potatoes? Prick two with a fork, 8 min in the microwave, nothing wrapped. Secret: slice the leek FIRST, then swish the slices in water, grit sinks and leek floats. Needs nothing beside it. 3 ASPARAGUS WITH A POACHED EGG (9-inch wide pan) 1 bunch THICK asparagus • 2 eggs • spoon of butter. Inch of water to a simmer, asparagus 4 min, lift out, butter over. Eggs into the SAME water, 3 min untouched. Secret: a spoonful of vinegar gathers the white into a neat parcel. Buy the FAT spears. Serve with small boiled potatoes. 4 SHRIMP FOIL PACKET (one sheet of foil) 1 bag peeled shrimp FROZEN • 1 cup frozen sweet corn kernels • spoon of butter. Corn in the middle, shrimp over, butter on top, pepper. Fold the long edges over each other, fold in the ends, 15 min at 400F. Secret: leave a DOME of air over the food, flat foil means no steam. Shrimp go in FROZEN. Eat it with bread. 5 ZUCCHINI NOODLES WITH PESTO (7-inch pan) 1 tub ready-made zucchini spirals • jar of pesto • grated parmesan. Dry pan on medium, spirals in, move them 2 MINUTES ONLY. Pan OFF the heat, pesto through, parmesan to finish. Secret: pesto goes in OFF the burner, heat turns it bitter. Light on its own, add rotisserie chicken or white beans. 6 SAVORY CLAFOUTIS (6-inch gratin dish) 1 box cherry tomatoes • small log goat cheese • 2 eggs, half a cup milk, quarter cup flour, whisked. Butter the dish, tomatoes in WHOLE, cheese dotted around, batter over, 30 min at 400F. Secret: leave the tomatoes WHOLE, cut ones leave a pink damp middle. Five minutes before the knife. Feta works too. Serve with a cucumber salad. 7 BAKED HADDOCK AND CORN (10-inch tray) 2 haddock fillets FROZEN • 1 cup frozen sweet corn kernels • 1 red bell pepper. Corn onto the tray in TWO PILES, pepper strips around, a frozen fillet on each pile, butter over, 20 min at 400F. Secret: the corn goes UNDER the fish, it lifts the fillet off the hot metal. Bake from FROZEN, thawed fish poaches in its own water. Green beans alongside. 8 KUKU SABZI (7-inch skillet with a lid) 1 big bag baby spinach, a bunch each of dill and parsley, chopped rough • 4 eggs. Pile the greens into a buttered skillet, it will look like far too much. Beat the eggs, pour over. Lid on, LOWEST heat, 20 min, untouched. Secret: more herbs than feels reasonable, it should look like a block of green barely held by the egg. Eat with plain yogurt and flatbread, keeps 4 days, good cold. 9 CRAB AND AVOCADO (mixing bowl, no heat) 1 can good crab, drained • 1 ripe avocado • 1 lemon. Avocado into the bowl, lemon over it FIRST, mash rough with a fork. Fold the crab through at the VERY END. Secret: mash the avocado ALONE, mashing the crab with it shreds it to paste. Spoon it over couscous, boiling water and a lid for 5 minutes. 10 BEEF AND BROCCOLI (7-inch skillet) 1 packet thin strips of beef • 1 bag frozen broccoli florets • soy sauce • 1 tsp cornstarch. Toss the strips with the cornstarch. Hot skillet, strips in, 2 min without moving. Frozen broccoli in, a splash of soy and of water, lid on, 5 min. Secret: the cornstarch holds the juice in and thickens the sauce by itself. Broccoli goes in STRAIGHT FROM FROZEN. Serve over wide egg noodles. How long do your legs give you at the stove these days?
