Description

Original Video Credit: IG@mike_fitzick This is what bread dough can look like after fermentation. The bubbles inside the dough are created by yeast. As yeast feeds on sugars in the flour, it produces carbon dioxide gas. That gas becomes trapped inside the dough instead of escaping immediately. The reason the gas can stay trapped is because of gluten. Gluten forms a stretchy network inside the dough, almost like lots of tiny elastic walls. These walls hold the gas bubbles and allow them to grow as the dough rises. When the dough is pulled apart in this video, you can see that stretchy structure very clearly. The thin strands and web-like texture are part of the gluten network that helps give bread its shape and structure. Fermentation does more than just make the dough bigger. It also affects the bread’s flavor, texture, and aroma. As the dough ferments, different compounds develop that can give the finished bread a deeper and more complex taste. In simple terms, yeast creates the gas, gluten traps the gas, and together they help turn dense dough into light, airy bread. This video is shared for educational purposes to explain fermentation, gluten, and the science behind bread making.
