Description

Every August my grandmother took over the kitchen for one full day, and by that night there was enough sauce on the shelf to get us to the next summer. Nobody bought a jar in January. Nobody had to. If your counter is covered in tomatoes right now, this is what to do with them before they go soft on you. Wash and check. Blanch, peel, mill. Then the one step most family recipes never had written down, because for a long time nobody needed it. The line your old recipe is probably missing: acid goes in the jar before the tomatoes do. Quart jar, 2 tablespoons bottled lemon juice or ½ teaspoon citric acid. Pint jar, 1 tablespoon bottled lemon juice or ¼ teaspoon citric acid. Every jar, every time, no matter how sweet those tomatoes tasted off the vine. Bottled lemon juice, not fresh squeezed. Fresh lemons vary too much fruit to fruit to trust for this. Nobody did anything wrong. The tomatoes changed more than the recipe did. A few things I won't budge on, and you shouldn't either: use a tested boiling water bath or a pressure canner, nothing else. No oven canning, no open kettle. Don't put up tomatoes under oil at home. Check a current tested processing chart for your jar size instead of guessing, and check every seal before anything goes on the shelf. Now tell me something. What did your family do with the extra tomatoes when you were young? Was lemon juice ever part of it, or was it something else entirely? I like hearing what different households were taught. There's usually something useful sitting in those old habits. Next time: what's really happening inside that bag of onions when one soft one takes the rest with it. It isn't what most people think. Subscribe and I'll keep showing you how a kitchen runs when throwing food away isn't an option. #canning #tomatoes #passata #foodpreservation #cucinapovera #italiancooking #pantry #homesteading
