Description

Some evenings your energy is spent, and a complicated recipe is simply not going to happen. So here are ten real suppers, three ingredients each, and every one of them comes with a little secret and one mistake to avoid, so it turns out right the very first time. Old-fashioned porcupine meatballs that cook right in the tomato. Ravioli lasagna with nothing to boil at all. A tuna noodle casserole with the flakes still whole. And number seven is the one that surprises people — most of them go and make it the very same night. ⏱️ DINNERS IN THIS VIDEO: 0:30 1. Crustless Ham and Cheese Quiche 2:37 2. Tuna Noodle Casserole 4:41 3. Porcupine Meatballs 6:45 4. Ham and Scalloped Potatoes 8:36 5. Ravioli Lasagna 10:30 6. Ground Beef Wrapped in Bacon 12:17 7. Egg Roll in a Bowl ⭐ 14:04 8. Broccoli, Cheese and Rice Bake 15:47 9. Pork and Sauerkraut with Apple 17:33 10. Bean and Bacon Soup 🍽️ FULL RECIPES (1-2 servings — several cover two dinners, so freeze the extra in single portions) 1. CRUSTLESS HAM AND CHEESE QUICHE 6 eggs • 1 cup diced ham • 1 cup shredded cheese • salt and pepper. Beat the eggs a FULL MINUTE. 350°F for 35 min. 👉 Secret: a spoonful of mayonnaise in the eggs makes it richer without cream. Pull it while the middle still has a SOFT WOBBLE — a firm center turns rubbery. Rest 10 min. 2. TUNA NOODLE CASSEROLE 1 can tuna, drained • 4 oz egg noodles • 1 can cream of mushroom soup with ½ can water • butter. Boil the noodles 2 MINUTES SHORT of the bag. 350°F for 25 min. 👉 Secret: dot butter over the top before baking for a browned crust. Fold the tuna in TWO OR THREE TIMES ONLY — stirred tuna disappears into grey creaminess. Rest 5 min. 3. PORCUPINE MEATBALLS ½ lb ground beef • ⅓ cup RAW long grain rice • 1 can condensed tomato soup plus one can water. Roll 6 golf-ball meatballs. COVER TIGHT. 350°F for 45 min. 👉 Secret: DO NOT STIR them once they are in — they fall apart until the rice sets. The cover is what traps the steam that softens the rice. 4. HAM AND SCALLOPED POTATOES 1 box scalloped potatoes with its packet • 1 cup diced ham • 1 cup shredded cheddar. Foil on, 400°F for 30 min, then uncovered 15 more. CHEESE ONLY FOR THE LAST 10 MINUTES. 👉 Secret: press the ham down under the liquid before it bakes — on top it dries into salty chips, under it stays soft and smoky. Rest 5 min. 5. RAVIOLI LASAGNA 1 bag FROZEN cheese ravioli • 1 jar marinara • 2 cups shredded mozzarella. Layer sauce, ravioli, sauce, cheese, ending with cheese. Foil on, 375°F for 30 min, uncovered 15 more. 👉 Secret: be generous with the sauce — it is the only thing cooking that pasta, and a dry corner stays hard. NEVER THAW the ravioli. Rest 10 min before cutting. 6. GROUND BEEF WRAPPED IN BACON 1 lb ground beef • 8 slices bacon • 1 cup shredded cheese • salt and pepper. Mix with FINGERTIPS ONLY, shape a tall loaf, set it ON A RACK over a sheet pan. 375°F for 50 min. 👉 Secret: the rack — fat drips away instead of frying the bottom. Lay the bacon on LOOSE; pulled tight it splits and slides off. Rest 10 min, slice thick. 7. EGG ROLL IN A BOWL ⭐ 1 lb ground pork • 1 bag coleslaw mix • 3 spoons soy sauce • black pepper. Brown the pork and DO NOT DRAIN. Add the slaw IN TWO GOES, then the soy sauce and 3-4 min more. One skillet, 12 minutes. 👉 Secret: hold back a handful of the RAW slaw and scatter it over at the end — cooked cabbage alone never gets that crunch. 8. BROCCOLI, CHEESE AND RICE BAKE 2 cups cooked rice • 1 bag frozen broccoli florets • 8 oz processed cheese. Microwave the broccoli 5 min, then DRAIN IT AND PRESS IT DRY. 350°F for 25 min. 👉 Secret: cut the cheese into SMALL CUBES, not slices — cubes melt evenly through the rice, slices leave dry pockets. Wet broccoli is what sinks this dish. 9. PORK AND SAUERKRAUT WITH APPLE 1 lb boneless pork shoulder • 1 jar sauerkraut • 1 apple • plenty of pepper. RINSE AND SQUEEZE the kraut. Brown the pork, lay it on top, COVER TIGHT. 350°F for 1½ hours. 👉 Secret: GRATE the apple instead of slicing it — it melts into the kraut and sweetens the whole dish from the inside. Pull the pork apart with two forks at the end. 10. BEAN AND BACON SOUP 2 cans white beans, drained • 6 slices bacon • 4 cups broth • plenty of pepper. Crisp the bacon, lift it out, LEAVE THE FAT. Beans and broth BARELY TREMBLING for 20 min. 👉 Secret: mash a cup of the beans against the side of the pot and stir them back in — thick and creamy without a drop of cream. Boiling hard turns them to paste.
