Description

Soft dinner recipes for the evenings when even chewing feels like work. These are ten easy meals for seniors that give way to a spoon, cost around two dollars each, and are on the table in fifteen minutes. Gentle foods that are easy to chew, and not one of them tastes like you settled for less. Soft does not mean less. ⏱️ DINNERS IN THIS VIDEO: 0:45 1. Biscuits and Sausage Gravy (the gravy does the softening) 2:30 2. Butter-Poached Cod with Peas (falls into flakes) 3:53 3. Creamy White Beans with Spinach (no pasta needed) 5:38 4. Cauliflower and Potato Mash with a Hard-Boiled Egg (no mashing) 7:17 5. Stovetop Macaroni and Cheese (never grainy) 9:03 6. Chicken Noodle Soup (the one your mother made) 10:38 7. Hamburger Steak with Rice and Gravy (you will not need the knife) 12:36 8. Creamy Tomato Soup (one block of cream cheese) 14:09 9. Turkey and Gravy over Soft Stuffing (a holiday on a Tuesday) 15:44 10. Banana Pudding (allowed to be supper) 🍽️ FULL RECIPES (1 serving) 1. BISCUITS AND SAUSAGE GRAVY Two refrigerated biscuits • 3 oz breakfast sausage • 1 tbsp flour • 1 cup milk • Black pepper. Bake the biscuits, brown the sausage five minutes, stir the flour in for one minute, pour the milk in and simmer three to four minutes. 👉 Secret: pour the gravy hot. Hot gravy is what makes the biscuit collapse and go soft. 2. BUTTER-POACHED COD WITH PEAS One cod fillet, about 4 oz • 2 tbsp butter • ½ cup frozen peas • A squeeze of lemon. Melt the butter low, warm the peas two minutes, lay the cod in, spoon butter over, lid on, four minutes. 👉 Secret: turn the burner off completely and leave it covered three minutes more. That gentle finish keeps it from going dry. 3. CREAMY WHITE BEANS WITH SPINACH One can cannellini beans • ½ cup jarred Alfredo sauce • ½ cup frozen chopped spinach • Parmesan and pepper. Thaw the spinach, tip the beans in, pour the sauce over, five minutes on low. 👉 Secret: do not rinse the beans hard. The soft starch on them is what thickens the sauce. Press a few against the pan to thicken it. 4. CAULIFLOWER AND POTATO MASH WITH A HARD-BOILED EGG 1½ cups frozen cauliflower • ½ cup instant potato flakes • ¼ cup shredded cheddar • One hard-boiled egg. Microwave the cauliflower five minutes in half a cup of water, do not drain, stir the flakes straight in, mash with a fork. 👉 Secret: the cauliflower water is the liquid for the potato. Buy the eggs already boiled and peeled if peeling is hard on your hands. 5. STOVETOP MACARONI AND CHEESE 1 cup dry elbow macaroni • ½ cup evaporated milk • ¾ cup shredded cheddar • 1 tbsp butter. Boil the macaroni seven minutes, drain, back in the warm pan off the heat, milk and butter in, then the cheese in two handfuls. 👉 Secret: keep the pan off the flame. Cheese over direct heat turns sauce grainy every time; evaporated milk refuses to curdle. 6. CHICKEN NOODLE SOUP 2 cups chicken broth • A handful of cooked chicken • ½ cup wide egg noodles • ¼ cup frozen sliced carrots. Boil the broth, carrots three minutes, noodles six, torn chicken for the last two. 👉 Secret: cook the noodles right in the broth, never in a separate pot. The starch coming off them is what gives the soup body. 7. HAMBURGER STEAK WITH RICE AND GRAVY ¼ lb ground beef • ½ cup instant rice • One packet brown gravy mix • One egg. Shape one patty, four minutes a side, lift it out, make the gravy in the same pan, boiling water over the rice, fry the egg. 👉 Secret: do not press the patty with your spatula. Every press squeezes the juice out and tightens the meat. 8. CREAMY TOMATO SOUP One can condensed tomato soup • 3 oz cream cheese • ½ cup milk • Black pepper. Soup and milk over low heat, cream cheese cut small, stir three minutes until it disappears. 👉 Secret: cut the cream cheese small and keep the heat low. Watch the colour: when the last white streak vanishes it is ready. 9. TURKEY AND GRAVY OVER SOFT STUFFING 1 cup dry stuffing mix • ¾ cup chicken broth • 3 oz sliced deli turkey • ½ cup gravy. Boil the broth, stir the stuffing in, off the heat, lid on, five minutes. Tear the turkey into the warm gravy. 👉 Secret: use a splash more broth than the box says. Box instructions aim for stuffing that holds its shape; tonight we want the opposite. 10. BANANA PUDDING 1 cup cold milk • ½ box instant vanilla pudding mix • One ripe banana • Six or seven vanilla wafers. Whisk the pudding two minutes, layer wafers, banana and pudding, half an hour in the refrigerator. 👉 Secret: the wait is the recipe. The wafers must go completely soft. Use a banana with brown freckles.
