Description

Tired of figuring out what to cook every single night? Ten cheap dinner ideas for one or two people, built from pantry staples and the simplest things in the store, and every one has a trick inside it that makes it better than it has any right to be. Shipwreck casserole layers everything in raw and bakes itself. City chicken has no chicken in it at all, and that is the joke. Haluski turns half a cabbage into supper, and the wacky cake needs no eggs, no butter and no mixing bowl. Every recipe is portioned for a small household, so nothing goes to waste and there is barely any cleanup. ⏱️ DINNERS IN THIS VIDEO: 0:57 1. Shipwreck Casserole (nothing gets browned first!) 3:42 2. Crispy Potatoes and Franks 6:00 3. City Chicken (there is no chicken in it) 8:40 4. Haluski 10:53 5. Pantry Stew 13:03 6. Poor Man's Lobster 15:14 7. Spanish Rice 17:34 8. Potato Pancakes 19:38 ⭐ 9. Chopped Steak in Mushroom Gravy 22:01 10. Wacky Cake (no eggs, no bowl) 🍽️ FULL RECIPES (1-2 servings) 1. SHIPWRECK CASSEROLE 1 large potato sliced THIN AS A COIN • ½ onion • ¼ lb ground beef, RAW • 3 Tbsp rice • ½ can kidney beans, drained • 1 can tomato soup + 1 FULL CAN water. Layer in a buttered dish, cover tight with foil, 350°F 1½ hours. 👉 Secret: the full can of water — rice drinks more than you expect. 2. CRISPY POTATOES AND FRANKS 2 potatoes in small cubes (WAXY red or yellow) • 1 onion sliced • 2 hot dogs in coins • 1 Tbsp oil. One layer, medium heat, LEAVE THEM ALONE 5 minutes, turn ONCE, onion in, franks the LAST 5 MINUTES. 👉 Secret: doing almost nothing — every stir knocks the crust off. Reheat in a dry pan. 3. CITY CHICKEN ¾ lb PORK SHOULDER in cubes • 1 Tbsp mustard • ½ cup breadcrumbs • oil • ½ cup broth • 4 wooden skewers. Thread 4-5 cubes each, brush with mustard, roll in crumbs, brown all four sides, then into a dish with the broth around, covered, 350°F 40 minutes. 👉 Secret: mustard instead of egg — it glues the crumbs and saves a bowl. Do not stop after browning. 4. HALUSKI ½ head cabbage chopped • 1 onion sliced • 4 oz egg noodles • 4 Tbsp butter. Boil the noodles, keep a splash of the water. Cabbage and onion in the butter TWENTY MINUTES, until collapsed by half and golden at the edges, then the noodles and that splash. 👉 Secret: brown the butter before anything goes in. 5. PANTRY STEW ½ cup macaroni • 1 can tomatoes • ½ can corn • ½ can beans • 2 hot dogs in coins. DO NOT DRAIN A SINGLE CAN. Tomatoes plus ½ cup water to a simmer, macaroni straight in 8 minutes, then corn and beans WITH THEIR LIQUID, franks and black pepper, 10 minutes low. 👉 Secret: the macaroni cooks in the tomato liquid, so the flavor ends up inside it. 6. POOR MAN'S LOBSTER 1 cod fillet • 4 Tbsp butter • 1 Tbsp SUGAR • salt • ½ lemon. Water with the sugar and salt to a GENTLE simmer, cod in 6 minutes, no more, lift out with a slotted spoon. Melt the butter, squeeze in the lemon, pour over. 👉 Secret: the sugar draws out a sweetness close to shellfish. NEVER a rolling boil. Does not keep — eat all of it. 7. SPANISH RICE 2 slices bacon • ½ onion • ½ cup LONG GRAIN rice • 1 can tomatoes • ¾ cup water • 1 tsp paprika. Crisp the bacon, lift it out, leave the fat. Onion until soft, then DRY RICE STIRRED 2 FULL MINUTES before any liquid. Tomatoes, water, paprika, bacon back in, lid on, lowest heat, 20 minutes. 👉 Secret: do not lift the lid. 8. POTATO PANCAKES 2 cups COLD mashed potato • 1 egg • 3 Tbsp flour • ½ onion grated • oil. Fork it together, shape flat rounds the size of your palm, fry 4 minutes a side, turning once only. 👉 Secret: COLD potato, pressed to half an inch. The egg is the glue — without it they break under the spatula. 9. CHOPPED STEAK IN MUSHROOM GRAVY ½ lb ground beef (REGULAR, not lean) • ¼ cup breadcrumbs • 2 Tbsp milk • ½ onion grated • 1 can mushroom soup. Mix with FINGERTIPS ONLY, press flat an inch thick, refrigerate ONE HOUR, cut in squares, brown both sides in one layer, then the soup with half a can of water over, covered, low, 30 minutes. 👉 Secret: the hour in the cold is what lets it slice like a steak. Double the batch and freeze them sitting in their gravy — they thaw tasting freshly made. 10. WACKY CAKE 1½ cups flour • 1 cup sugar • 3 Tbsp cocoa • 1 tsp baking soda • 1 Tbsp vinegar • 1 tsp vanilla • 5 Tbsp oil • 1 cup water. Straight into an 8-inch pan, stir the dry with a fork, three wells — vinegar, vanilla, oil — the water over the lot, stir smooth, 350°F 30 minutes. 👉 Secret: stir until the dry flour disappears, then STOP.
