Let me show you today the other great one-dish comfort pie, a proper old-fashioned shepherd's pie, a rich savory filling of ground meat and vegetables in a thick gravy, crowned with a golden, crisp-topped layer of creamy mashed potatoes, all baked together until bubbling and browned, so you spoon down through that mashed potato crust into the hearty meat and gravy beneath. It is a whole meal in one dish, a close cousin to the chicken pot pie I showed you but with a crown of mashed potatoes in place of a pastry crust, and it is honest, thrifty home cooking.
Now, an honest word on the name, properly, a shepherd's pie is made with lamb, and the same dish with beef is a cottage pie. Folks call them all shepherd's pie now, but that is the true distinction. And since I raise cattle, not sheep, my own is by rights a cottage pie, made with beef, which is how I will mostly show you, though lamb makes a true shepherd's.
INGREDIENTS (serves 6)
For the filling:
1 1/2 lbs ground beef (or lamb)
2 tablespoons oil
1 onion, chopped
2 carrots, diced small
2 cloves garlic, minced
1 tablespoon tomato paste
2 tablespoons flour
1 1/2 cups beef broth
1 tablespoon Worcestershire sauce
1 cup peas
Thyme, rosemary, salt, pepper
For the mashed potato top:
2 lbs potatoes, mashed
4 tablespoons butter, 1/2 cup milk
1 egg yolk
1/2 cup grated cheese (optional)
Here is what you will learn:
✔ The true shepherd's pie vs. cottage pie (lamb vs. beef)
✔ How to brown the meat and build a rich brown gravy
✔ Why the filling must be THICK, not thin (the commonest fault)
✔ How to make the enriched mashed potato crown
✔ The fork-ridge trick so the top browns crisp and golden
✔ How to bake it golden and bubbling
✔ The old thrift: the Sunday roast reborn as Monday's pie
✔ Why it is a grand use for leftovers
✔ How to make it ahead or freeze it
✔ How to fix a runny filling, a sliding top, or a pale crust
