Let me show you today a lovely, gentle, comforting supper, a chicken fricassee, tender chicken pieces cooked soft and pale in a delicate, creamy, ivory-white sauce with mushrooms and onion, finished rich and silky with a touch of cream and egg, and served over noodles or rice. It is comforting like my other creamy chicken dishes but lighter, gentler, more delicate, an old and rather elegant thing, an old French way with chicken that came over long ago and settled into American and even my own Pennsylvania Dutch home cooking.
Now, this is kin to my creamy baked chicken and my mushroom pork chops, but its own thing. A fricassee is a gentle white braise, which means you do NOT brown the chicken dark, so it stays a delicate ivory white, lighter and more refined. And it has a special old finish, a liaison of egg yolk and cream stirred in at the end, which makes it silky and rich in a way a plain cream sauce is not.
INGREDIENTS (serves 4)
4 bone-in chicken pieces
3 tablespoons butter
8 oz mushrooms, sliced
1 onion, chopped
3 tablespoons flour
2 cups chicken broth (homemade is best)
Salt, white pepper, thyme, bay leaf
2 egg yolks
1/2 cup cream
A squeeze of lemon
Egg noodles or rice, to serve
Here is what you will learn:
✔ What a fricassee is (a gentle white braise, not a browned one)
✔ Why you cook the chicken pale, NOT browned dark
✔ Why you keep the onions and mushrooms pale too
✔ How to build a pale white sauce (a roux that does not brown)
✔ The special old finish: the egg-yolk-and-cream liaison
✔ Why you must temper the eggs so they do not scramble
✔ Why the egg yolk makes the sauce silky and rich
✔ Why a squeeze of lemon brightens it at the end
✔ The bold way vs. the gentle way of cooking (and when each is right)
✔ How to fix a curdled, brown, or thin sauce
You do not need a restaurant. You need chicken, mushrooms, cream, and a bit of egg. And once you taste this silk
