Let me show you today one of the great wholesome breakfasts of the old kitchen, a proper baked oatmeal, hearty oats baked with grated apple and carrot and a bit of honey into a soft, tender, cake-like breakfast, warm and nourishing and gently sweet, the kind of breakfast that fills a body up and fuels a morning's work honestly. This is real old Pennsylvania Dutch breakfast food, a baked oatmeal being a dish my people have long made, wholesome and filling and naturally sweet, sweetened by the fruit and a touch of honey rather than a heap of white sugar, and made of oats rather than white flour, not as some fashionable diet notion but simply because that is how the honest old dish is, hearty whole food.
Now, this is not a diet cake, no guilt-free this or skinny that. It is simply an honest old wholesome breakfast, made the plain hearty way it has always been made. And it is not my quick breads, those being cakes of white flour, nor a bowl of stovetop porridge, but a baked oatmeal, its own hearty wholesome breakfast bake.
INGREDIENTS (one 8-inch dish)
1 1/2 cups old-fashioned rolled oats
1 apple, grated
1 carrot, grated
1 egg
1 cup milk
1/4 cup honey (or maple syrup)
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 teaspoon vanilla
Optional: chopped walnuts, raisins
Here is what you will learn:
✔ Why it is wholesome the honest old way (not a diet gimmick)
✔ Why you use old-fashioned rolled oats (not instant)
✔ How grated apple and carrot sweeten and moisten it naturally
✔ Why honey or maple, not white sugar (his honest sweeteners)
✔ Why a bit of baking powder for a light, tender bake
✔ How to bake it until set and golden
✔ Why it is a hearty, sustaining breakfast that fuels a morning
✔ How to make a batch ahead and warm squares all week
✔ How to make it your own (berries, nuts, other fruit)
✔ How to fix a dry, wet, or dense baked
